In general peanuts are very good sources of protein. For example, boiled peanuts contain about 13.5% protein whereas fully dry roasted peanuts contain about 24.4% protein.
The difference in protein quantity of both these varieties is because of moisture content. 100 grams of boiled peanuts contain about 42 g of water whereas dry roasted peanuts contain as little as 1.8 grams of water.
